Ingredients:

  • 1 pack of rice paper

  • 1 pack of vermicelli noodles

  • 1 cucumber

  • 1 carrot

  • 1/2 a head of Lettuce

  • Protein of choice: I prefer tofu

  • Mint

  • Coriander


Method:

  1. Cook the vermicelli noodles according to the packet instructions

  2. While they cook away, shred your carrot using a box grater

  3. Slice your cucumber into thin sticks, scooping out the watery seeds in the middle

  4. Roughly slice your mint, coriander and lettuce

  5. Cook your protein of choice

  6. Next up, soak your rice paper according to the instructions and it’s assembly time

  7. I prefer to go noodles, carrots, cucumber, lettuce, tofu, mint, coriander but it’s up to you - dealer’s choice!

  8. Wrap up like a tasty little summer burrito and serve with your favourite condiments (Hoisin sauce, a peanut dipping sauce, sweet chilli sauce, Tamari, etc)
